Intro: Mustard is an acquired taste. I have heard that it brings out the flavors in dishes, particularly meat ones like beef, but it does have quite a kick to it and I find if you are not careful then you can quickly drown out the taste of everything you are eating and ruin your whole dinner! The stats below are for prepared yellow mustard which I can only assume means the finished condiment that is like a spicey yellow paste and is made by grounding up the seeds from the mustard plant which releases mustard oil, and then combining it with various other thickening agents and stabilizers to produce the popular condiment.

There are lots of different varieties of mustard in the world, and these are made either by using different varieties of mustard plant, or different processes and different ingredients once the seeds have been crushed to release the oil. The plant can be grown almost anywhere but apparently Canada supplies 90% of the global supply of mustard seed!
