Intro: When I hear the term ‘horseradish’ then I always think of the sauce, I didn’t know it was actually a herb used in the production of the sauce! This is another ancient herb like the dill weed we looked at the other day, and apparently not only is it mentioned in Greek mythology where it was said to be worth its weight in gold (not sure why!) but also murals depicting horseradish have been found in excavations at Pompeii, so this herb has been an important part of our lives for thousands of years.

The root and the leaves of this plant have been used at medicine throughout the ages, but as a herb then typically it is the grated root which is added to dishes. By grating the root you force a mustard oil to be secreted, and then if you keep the grated roots in vinegar you can preserve the taste for months in the refrigerator, otherwise it will start to lose its potency very quickly.
