Intro: I must admit I had to look these up, I have never heard of or used capers before! Apparently this actually refers to the edible flower bud of the caper bush, there is also a caper berry which can be pickled and eaten, however it is the flower bud which is the more popular product from this plant. Once the buds have been picked then they are pickled in a salt or salt and vinegar solution and then drained, which allows an intense flavor to develop as it stimulates the release of mustard oil from each bud which is why these are popular as a seasoning for dishes.

Capers are popular in Mediterranean cuisine, particularly in Italy where they are added to everything from pizzas to pasta, and apparently they can also be used instead of olives to garnish a martini! For such a small sample size (one tablespoon) then you can see that really they contain a significant amount of calcium, magnesium, vitamin A, folic acid and vitamin K.
