Intro: Scotch broth is my current soup of choice in these winter months, I prefer a good chunky vegetable soup really as this is a broth so it is a lot more watery, however I have had my fill of vegetable soups for the past few months so I need a change. As you would guess from the name then this particular recipe originates from Scotland and has become a firm favorite around the world now. It is mainly made from barley and pieces of lamb or mutton, then other vegetables are added like carrot and swede and turnip or even things like leeks, to bulk it out and add taste.

It tends to be a watery soup as no cream is used, however as you can see below then the lack of cream means that the fat content of this is kept reasonably low, although lamb is a very fatty meat so it is still about 2% fat. Also for some reason the vitamin A content for the soup analysed below is huge!
