Intro: We spoke about turkey thigh last week and we said that it had roughly the same fat content as chicken, even though turkey is supposed to be a much leaner meat. This turkey breast though is leaner than chicken, it contains about 1.5% fat compared to 3% for chicken. That is not a huge difference I know, but typically people eat turkey because they need a lot of meat for a big meal, not because of the fact it is supposed to be leaner than other cuts of meat.

Cooking the turkey in the oven is hard work, it takes up pretty much the whole oven and takes hours and hours to cook through, then when it is fully cooked you will probably find it is dry and very hard to eat without some sort of cranberry or bread sauce to add some moisture to it. When we discussed the thighs then we said the best way to cook it is to deep fry it, and the safest way to do that is to use an indoor turkey fryer. The outdoor propane ones are faster I know, but you also have to leave a vat of boiling oil around in the garden for your kids or dog to knock over, so I think an indoor one is the much better option.
