Intro: This is the pâté version of foie gras, which is actually the lowest quality way to enjoy this delicacy, the better way is a in the form of a parfait or a mousse. Ironically while this is the worst way to enjoy foie gras then this is actually considered to be the best pâté that you can buy. The thing that makes this dish special is that is uses specially fattened duck or goose liver, which gives it a much richer and more buttery taste. However that is also the most controversial part of this dish because often to fatten up the birds enough to get their liver to the stage it needs to be at then they will force feed the birds lots of food! That is why it is considered by many to be a cruel food and force feeding animals for this purpose is actually banned in many European countries and even some states in the US. There are apparently more humane ways to get the same effect, but I have yet to see any evidence of that.

As you can imagine this has a very high fat content, nearly 45%, and it also contains a lot of vitamin A which is also what we saw when we looked at the chicken livers last week.
