Intro: My favourite way to enjoy pecans is in a pecan plait which is a pastry with pecans on top and a sugary caramel sauce inside it, although I know pecan pie is also a delicious way to enjoy them. The pecan tree (Carya illinoinensis) is a species of hickory that is native to Mexico and Southern USA, it is a large tree growing to up to 40m in height, and like a lot of the other nuts we have looked at then the pecan nut from this tree is actually a seed from a drupe and not technically a nut. The flower matures into a husk surrounding the seed inside, then later on that husk starts to split which releases the seed inside.

The pecan nut is a much loved nut, but people tend to eat it as part of a dessert of some kind rather than eating them raw like people do with sesame seeds and pine nuts etc. These trees were cultivated from the end of the 19th century and now the USA produces over 80% of the annual global pecan crop from over 10 million trees.
