Intro: Pecan pie is a simple pie made using corn syrup or maple syrup, and pecan nuts. Pecan nuts grow on pecan trees (Carya illinoinensis) and surprisingly it is the US that produces most of the world’s supply of pecan nuts, with an annual crop of 150,000 tons or more, about 80 – 95% of the worlds production according to Wikipedia.

The strange thing is I can’t actually tell you what a pecan nut tastes like, because I have only ever had them with really sweet pudding type items like this pie or the popular pecan plait that I love, so the taste gets drowned out by all the sugar.

This pie uses a sweet pastry to go around the bottom and edges, and then the filling is made in lots of different ways depending on where you are and who you speak to, but the recipe I just found has eggs, sugar, maple syrup, rum, butter, vanilla extract, salt and pecans of course. While that sounds delicious, then this is a high-carb and high-fat pie!
