Intro: Coconut cream is a very mild tasting cream. It is made by mixing shredded coconut with water or milk and cooking until frothy, that makes coconut milk when you strain the liquid out. Then leave that in the fridge for a while and the cream will rise to the top for you to skim off. The problem is… none of the recipes I found actually use coconut cream in them! It looks like that name evolved just because the pie has a coconut flavour and is usually topped with cream.

So the recipes I have seen just use a single pie crust, then they add a coconut pudding mix to that made from milk, cream, flour, eggs and flaked coconut. On top of that goes lots of whipped cream and some more flaked coconut and the whole thing is put into the refrigerator to set.
