Intro: Muffins are great. They are easy to eat because they come with a casing around the bottom which you can hold, and you can easily pick pieces off with your fingers as you work because they are soft and fluffy. My favourite kind is the blueberry muffin, because blueberries taste great and are packed full of antioxidants. You can find hundreds of flavours of muffin now, and most of them get less healthy as they get more exotic! (not that they are healthy to begin with mind).

The details below are for a mixed grain muffin, which typically means that more than one kind of flour has been used in the mix. I have seen recipes which have as many as 8 different kinds of flour in them! That means you will find slightly more fiber in this one than other muffins, and it might taste a bit more ‘dense’ from the combination of flours.
